Koyle ~<\/em><\/p>\n<p>January is <a href=\"https:\/\/www.nifa.usda.gov\/about-nifa\/blogs\/january-national-soup-month\">National Soup Month<\/a>, and for obvious reasons. This is the middle of winter for those of us in the northern hemisphere, and hot soup is a perennial favorite winter comfort food. Generations of people have enjoyed soup in countless varieties on a cold winter\u2019s day, and not just because it\u2019s a tasty way to warm up one\u2019s insides. Cold weather is not just uncomfortable, it can also lead to an increase in the transmission of viruses and other infectious diseases. Today, \u201c<a href=\"https:\/\/circulatingnow.nlm.nih.gov\/2016\/05\/10\/beyond-chicken-soup-with-a-taste-of-nlm\/\">chicken soup<\/a>\u201d is often used as a shorthand for soothing what ails you.\u00a0 In a <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC1230870\/\">1999 article<\/a> in the <em>Canadian Medical Association Journal<\/em> the authors argue (clearly tongue-in-cheek) that chicken soup, which has been prescribed for various illnesses for over 2,000 years, should be considered an \u201cessential drug.\u201d While good soup with the right ingredients can be part of a healthy diet and can certainly help you feel good, calling it medicinal would be a bit of a stretch.<\/p>\n<p>The National Library of Medicine&#8217;s collections include dozens of <a href=\"https:\/\/circulatingnow.nlm.nih.gov\/tag\/recipes\/\">recipe books<\/a> dating back to the 17th century, and almost all of them contain recipes for all sorts of soups\u2014some familiar, some unusual or bizarre by present-day standards. Many of these early recipes are accompanied by anecdotal medicinal and curative claims. One of these, \u201cA Pocket or Portable Soup,\u201d is an <a href=\"https:\/\/www.youtube.com\/watch?v=2fE5KzvOZRk\">18th-century instant soup recipe<\/a> that \u201cwill keep good for many months.\u201d The soup consists of a leg of veal that has been boiled and strained into a jelly, which is then dried on a piece of new flannel. When dry, &#8220;you may carry them in your pocket without the least inconvenience.&#8221; When it&#8217;s time to eat the dried soup, you simply break off a piece \u201cthe size of a large walnut\u201d and put it in a pint of boiling water.<\/p>\n<blockquote><p>&#8230;you may carry them in your pocket without the least inconvenience. When you make use of it, take a piece about the size of a large walnut, and pour a pint of boiling water on it; stir it till it is melted, and season it to your palate.<\/p><\/blockquote>\n<p>If \u201cpocket soup\u201d isn\u2019t your thing, perhaps you would prefer something with an aquatic flare. Mrs. Price offers a simple recipe for Eel Soup: &#8220;To every pound of eels put a quart of water, an onion, a blade or two of mace, a crust of bread, a bunch of sweet herbs, and some whole pepper.&#8221;
