fix: Wrong file location

Fix:

Wrong quarkus log link and folder creation.

Replace:
keycloak -> /opt/keycloak/keycloak-19.0.2//opt/keycloak/keycloak-19.0.2/data/log

For:
keycloak -> /opt/keycloak/keycloak-19.0.2/data/log
